Fresh skate wings
Lemon juice
Water
Capers
Arugula
Garlic, minced
Olive oil
Directions
- Soak skate wings in 3 parts lemon juice to 1 part water for 45 minutes, flesh should start to turn white.
- Heat up olive oil in pan over a medium high heat, add garlic, capers, arugula and cook until heated, remove from pan and set aside.
- Add a bit more olive oil if needed and gently place skate wings in the pan, sear about 2 minutes per side.
- Plate skate wing and top with arugula caper garlic mixture.
Notes
- Skate is very mild, flaky and not fishy tasting, serve with sliced lemon wedges if needed.
